Maliakai Design's restaurant work in Boulder spans chef-driven dining, fast-casual concepts, neighborhood restaurants, butcher shops, and spaces that have evolved into entirely new concepts over time.

Our Boulder hospitality experience includes Blackbelly, Santo, Morso, Illegal Pete's South Boulder, Wild Standard, Gaku Ramen, and Lucky's Bakehouse Café—each shaped by a different concept, location, and approach to hospitality.

That range of experience has given us a firsthand understanding of the opportunities and challenges that come with designing restaurants in Boulder, from adapting existing commercial spaces to creating environments that feel connected to the neighborhoods and communities they serve.

The best hospitality projects are built on trust. For us, some of the most rewarding work has come from relationships that continue from one restaurant to the next, allowing each new project to build on years of shared experience.

Our collaboration with Chef Hosea Rosenberg has grown across five hospitality projects in Boulder, including the continued evolution of Blackbelly, Santo, and most recently, Morso. Working together over the years has created a strong understanding of how Hosea and his team operate, while still allowing each restaurant to develop its own identity and guest experience.

We’ve also worked with Illegal Pete’s on multiple restaurant projects, including its South Boulder location. With each project, we’ve been able to build on our understanding of the brand while responding to the character, operational needs, and opportunities of each individual location.

Those long-term relationships reflect the way we approach every project: listen carefully, collaborate closely, and create spaces that support the people who bring them to life.
